Admiralty Lounge Winter Menu 2026
The Sunbird began life as a tortured Aquavit Martini and ended up as a sexy Margarita. Who knew caraway and Aperol would work so well together? Not me. I had to google it.
- 1 oz vodka
- 0.5 oz Aalborg Aquavit (it is crucial that you select an Aquavit with minimal dill and anise)
- 0.75 oz Aperol
- 0.75 oz Grapefruit Cordial
Shake and double strain over a large cube with a gummy candy sitting on top of it or single strain on the rocks with a gummy candy jauntily hanging off the rim of the glass.

Grapefruit Cordial:
- 500 grams warm water
- 500 grams sugar
- 3 oz grapefruit juice
- 50 grams citric acid
- 16 grams fresh grapefruit zest
Blend all ingredients on medium for 30 seconds, then strain through fine mesh strainer. Yields ~1 liter cordial.
