Admiralty Lounge Winter Menu 2026
This is the best cocktail I’ve made so far. It is named after Paddington 2.
- 1 oz Planteray Three Star White Rum
- 0.5 oz JM 110 Rhum Agricole
- 0.75 oz Ramazotti
- 0.75 oz Acidulated English Breakfast Tea
- 0.5 oz Rich Gomme Syrup
Stir. Serve on big rock and garnish with a tea bag filled with dehydrated fruit. Give the tea bag a cute little label. Why not?
Prep:
Acidulated English Breakfast Tea:
- 1 L Hot Water (~95 degrees Celsius)
- 50g English Breakfast Tea (Use the good stuff – I use one from a local tea shop)
- 20g Citric Acid
- 12.5g Tartaric Acid
- 7.5g Malic Acid
Combine tea and water and let steep for 5 minutes. Strain through fine mesh strainer, then stir citric, malic, and tartaric acid into tea.
Yields 1L Acid Tea
Rich Gomme Syrup:
- 1250g sugar
- 650ml hot water
- 100g gomme arabic
Combine all ingredients in blender and blend on high for several minutes or until fully incorporated.
Yields 1500ml rich gomme
