Admiralty Lounge Summer Menu 2026

This Mai Tai riff is a pain in the ass to make and clocks in at a whopping 400 calories to boot, but god is it delicious. I love playing with tiki-inspired drinks because I get to change my entire approach to flavors. Rather than refining an ingredient with a broad variety of expressions into one razor sharp flavor, I get to build sensation in the aggregate, allowing me to throw together liqueurs and syrups in ways I usually wouldn’t dare.

  • 1.5 oz high proof bourbon (I used Wild Turkey 101)
  • 0.5 oz Amaretto
  • 0.25 oz Giffard Banana liqueur
  • 0.25 oz Amaro Noveis
  • 0.5 oz Lemon
  • 1 oz Tahini Orgeat

Whip shake, dirty dump into a hurricane glass, pack with ice, and garnish with a dehydrated lemon wheel.

Prep:

Tahini Orgeat:

  • 400ml Tahini
  • 300ml honey
  • 300ml water
  • 100ml vodka

Combine all ingredients in a cambro and blend using an immersion blender.

Note: This stuff behaves a lot more like coconut cream than like any other orgeat I’ve worked with. Hold the bottle at room temperature during service for best results.
