Admiralty Lounge Winter Menu 2026
This Paloma riff was inspired by the Swedes – name from an Abba song, an ingredient from Ikea. Seriously though, I could not find any other affordable sources of lingonberry syrup no matter how hard I looked or who I asked.
- 1.5 oz oat-washed pisco
- 5 oz Lingonberry Soda
Garnish Collins glass with a rim of powdered blueberry, then add pisco, ice, and lingonberry soda to glass.
Prep:
Lingonberry Soda:
- 1200ml Water
- 200ml Dryck Lingon Syrup
- 8.45g Citric Acid
- 4.75g Malic Acid
Combine all ingredients in cambro and stir until incorporated. Bottle and force carbonate at 30 psi.
Oat-Washed Pisco:
- 1 L Pisco
- 200g Toasted Oats
Rinse oats thoroughly, then spread on baking sheet and bake in oven at 375 Fahrenheit for 20 minutes or until golden brown. Measure out 200g of toasted oats and combine with 1 liter pisco, then let rest at room temperature for 24 hours. Strain through fine mesh strainer, pressing on oats with a spoon or squeezing oats through a cheesecloth to extract as much pisco as possible. If resulting mixture is still cloudy, run through coffee filter.
YIELD: 81.4% (1L Pisco yields 814 ml oat-washed pisco)
Blueberry Rim:
- 35g powdered dehydrated blueberry
- 42g sugar
- 3g salt
Mix well then store in seasoning shaker.
