Admiralty Lounge Spring Menu 2025
This is the first drink I ever put on a menu and, like all beginner bartenders, I was obsessed with Earl Grey tea. Like my Fall 2025 cocktails I did not name this one, which is why it is named after a harbor that does not exist – the city of London is, quite famously, situated on a river.
- 2 oz Gordon’s Gin
- 0.25 oz Italicus
- 0.75 oz acid adjusted orange juice
- 0.75 oz Earl Grey syrup
- 2 dashes Scrappy’s Lavender Bitters
- Clarified Milk
Pour 4 oz of milk punch and bitters to a double rocks glass. Add ice and garnish with an orange peel.
Prep:
Acid Adjusted Orange Juice:
- 100 grams orange peels
- 45 grams citric acid
- 7 grams malic acid
- 1000 grams water
Add all ingredients to blender, blend on medium for 30 seconds, strain through a fine mesh strainer.
Earl Grey Syrup
- 2 Twining’s Earl Grey Tea Bags
- 236 grams hot water
- 236 grams sugar
Let tea sit 7-10 minutes or until oversteeped. Remove tea bags, add sugar, stir until incorporated.
Milk Punch:
- 1.5L Gin
- 250ml Italicus
- 750ml Orange Juice
- 750ml Earl Grey syrup
- 2.25L milk (ideally room temperature)
Combine all ingredients except milk. Measure milk into separate cambro, then pour batch into milk. Let sit for at least 30 minutes before straining through a fat filter, coffee filter, nut milk bag, or other straining apparatus, being sure to reintroduce the initial cloudy drops back into the strainer.
