Admiralty Lounge Fall Menu 2025

The Crossed Harpoons was born out of my fascination with acid and sugar adjustment. Apple juice is often challenging to work with because it isn’t sweet enough, sour enough, or apple-y enough to use at traditional cocktail volumes, but I had this sense that with some clever adjustments I could make it into a star. The secret ingredient here is ascorbic acid, which, in addition to adding tartness, also prevents the apple juice from browning.

  • 1.5 oz Gordon’s Gin
  • 0.5 oz Smith & Cross Traditional Jamaican Rum
  • 0.25 oz Montenegro
  • 4.25 oz Apple Juice

Build in hurricane glass, add ice, stir briefly to chill. Garnish with a spritz of peated scotch and a cube of cheese.

Prep:

Acid Adjusted Apple Juice:

  • 1 gallon Martinelli’s Apple Juice (If you have another brand of apple juice please recalculate your necessary added sugar)
  • 208 g sugar
  • 23.04 g citric acid
  • 23.04 g malic acid
  • 23.04 g ascorbic acid

Stir all ingredients until incorporated.
